Thanks for the recipes under the Valentines Day Tab. I'm looking to surprise my girlfriend. I am going to try the Shrimp Scampi, it sounds super easy and I'm not a wiz in the kithchen. If this goes well maybe I will try to make some more...but that's to be determined:)

This is in response to the desert recipe question. I love these cookies they are a must try! Hope you enjoy!

CAPPUCCINO COOKIE BARS
1 cup butter, softened
1 cup light brown sugar
1 egg yolk
1 tsp. vanilla extract
1-1/2 cups all-purpose flour
1/4 tsp. salt
8 (1.5 ounce) bars chocolate candy
1-1/2 cups chopped walnuts
1/2 cup ground coffee beans
Preheat oven to 350*. Grease a 9x13 inch baking pan.
In a large bowl, cream together the butter, brown sugar, egg yolk and
vanilla until smooth. Combine the flour and salt; stir into the creamed
mixture. Spread evenly into the prepared pan.
Bake for 15 minutes in the preheated oven. Remove from the oven and
place chocolate bars over the top in a single layer. Let stand until
chocolate is soft enough to spread. Spread the chocolate out smooth and
sprinkle with walnuts and ground coffee. Allow the bars to cool
completely before cutting into squares.

This is an awesome dessert and great for Valentine's Day!

Cream Cheese Cherry Pie

Pie Filling:

1 c. sugar
16 oz. cream cheese, softened
1 egg
1 tsp. vanilla flavoring
2 cans cherry pie filling (or blueberry)
2 roll out pie crusts (Pillsbury)

Icing:

1 c. powdered sugar
2 Tbsp. milk
1/4 tsp. vanilla flavoring

Place one pie crust on bottom of a 9 x 13 baking dish. Set aside. Mix cream cheese, sugar, egg and vanilla. Spread over pie crust. Spread cherry pie filling over top of cream cheese mixture. Cut second pie crust into strips and "lattice" across top of pie. Bake at 350 deg. for 30 - 40 min. or until brown.

Mix icing incredients and drizzle over top of pie while hot. Allow pie to cool until it firms up. Serve while warm. Refrigerate leftovers.

P.S. I had it cold straight from the refrigerator and it was awesome.
